Hello!

Welcome to Lifestyles of the Poor and Vegan!  My name is Kristi.

I am: A constant work in progress, a wife, a dog-mom, a lover of adventure, and an aspiring writer.

This is my adventure log, recipe book, photo album, and more.

I hope this blog inspires you to explore new places, try new foods, and experience new things.

I Can Hear The Bells!

Hey friends! Are you getting into the holiday spirit yet? I hope so, because there’s only 3 weeks or so until Christmas!

I am so excited!

This is one of my very favorite times of the year and I like to cram in as much fun stuff as I can. For example, tonight we’re going with my brother and his girlfriend to check out a “Holiday Lights in the Park” event. We get to drive around looking at the lights, listening to Christmas music, and drinking hot cocoa. (Yes please!) :) I’m really looking forward to it. It will be great to relax a little bit and spend some much needed time with family.

Things have been even busier than usual around here, lately, and we haven’t had as much time for family and friends as we might like. I haven’t had a lot of time to update the blog, either. (Sad face!)

That said though, I think you’ll be excited to hear why I haven’t been able to write very much these days. Just bear with me...

Like I said before, this is one of my favorite times of the year. It always has been; The lights, the music, the trees, and getting into the giving spirit. This year though, things are a little different.

Somehow, this holiday season has already been better than all previous seasons combined. Why? Well, I’ll tell you!

Are you ready?

This year, I am celebrating the holidays…

...As one half of an engaged couple! Say whaaaaa?!

That’s right! Josh and I are engaged to be married and it’s the best thing that’s ever happened to me! Which leads me to my excuse for being too busy for blogging...

I’ve been busy planning our wedding!

AGHHHH!!!!

I am ecstatic!

I have been wanting to share this amazing news since the day it happened, but who knew, planning a DIY wedding is a heckuva lot of work! ;) We have had practically zero time for anything, lately.

It’s hard to believe that it’s been nearly six months since Josh popped the question. We’ve been running around, shopping, planning, crafting, and more since June! At first it seemed like next June was a million light years away, but now, it seems to be creeping up on us a little too quickly!

Aside from our engagement, we’ve been up to a lot of other things, too! Back in May, we went on an almost 2 week long road trip (so many fun photos and detail to share later!) and we attended the Hangout Music Festival in Alabama. We kayaked at a ton of new places, Josh took a new job, and I flew in an airplane for the first time in my life! On top of that, Josh and I are both continuing our education and contributing to different charities. It’s been a whirlwind few months (where did summer go?!), but we are loving it.

I am really looking forward to sharing some stories, reviews, and recipes from the last few months - Hopefully sooner rather than later! Some things you can look forward to reading about soon:

  • A recipe for the BEST EVER vegan potato salad
  • Our proposal story
  • Planning a DIY, backyard, vegan wedding
  • Our 2 week road trip to Hangout Fest, and...
  • The Hangout Music Festival Experience, plus...
  • Our visits to Charleston, SC and St. Augustine, FL, including all of the delicious food we ate there.
  • Our charity projects, and...
  • So much more...

Keep an eye out for updates!

I hope all is well with each and every one of you.
